Confiserie Class - French Confections

This is one of Chef Delphin's passions and childhood favorites! In Paris he learned from the finest Confiserie craftsmen in the world - but you don't have to travel there - come to his hands-on class here in our Amesbury kitchens!

We promise a great night learning from and laughing with Delphin. He's an artist and a passionate teacher at heart.  When you share the huge bevy of treats you take home, your family and friends will be 'wowed'!! (oh..and they'll probably ask you to make more! So..maybe don't share. :) )
  • Learn how to make soft, chewy, melt-in-your-mouth caramels with traditional and more innovative flavors.

  • Make caramel sauces for desserts

  • Learn how to create fluffy homemade marshmallows in interesting colors and flavors.  You may never buy another store-bought marshmallow!

  • Learn the proper techniques for making French pate de fruit (fruit jellies)

Had such fun and learned so much from Chef Michael

This was such an enjoyable class. Chef seemed to be able to watch us all simultaneously and made sure we were on the right track with our ingredients and process. He made it fun and we came home with so many goodies which we will try to make at home. Definitely will sign up for another class! Merci mille fois!

Great Class

I was hesitant to take the class as a hobbyist cook but I am so glad that I did so. The class was fast paced and the four hours went by too quickly. The treats that were made were delectable. The boxes of the nights accomplishments that I brought home were a huge hit by friends and family . Treats that I will surly make at home again and again. I will be taking another class in the near future. Thanks for the lessons.

Delicious and fun!

It's amazing how many different kinds of confections we made in one class! And the flavors are true--the fruit jellies taste like real fruit, not just sugar, and the mint patties are made with fresh mint. Making the marshmallows was especially fun, because you see the ingredients transform into a pillowy soft confection, and you bite into a sweet cloud of rose, or lavender, or tangerine.
