Class - Pulled Sugar - Sweetly Delicate Sculptures
We're so excited to have world renowned Pastry Chef and Chocolatier Delphin Gomes here in Amesbury to lead this great evening! He loves teaching all skill levels - and you'll be hands-on and diving in to create your own masterpieces!
You'll leave with the knowledge and instruction to recreate these for yourself at home. You'll also leave with a huge bounty of deliciousness!
Pulling and sculpting cooked sugar is a rarely seen craft and art. The sugar artisan is capable of producing exquisite decorations that elevate any dessert or festive table setting. In this class students will be creating a variety of decorations that can be used in the optional croquembouche class the following week.
- Make a variety of beautiful items like roses, ribbons, and other flowers, all from sugar
- Know and understand the stages of cooked sugar
- Demonstrate the proper method for cooking sugar
- Prepare sugar for pouring and pulling
NOTE: This class is an optional prerequisite for the following week’s croquembouche class. Students who register for both classes may incorporate their sugar decorations into their croquembouche the next week.
